- 300g coconut
- 300g sugar
- 1 tblsp flour
- 6 eggs
- 1 lemon (zest)

Description
They always remind me of Christmas because my mother used to make them then, but they are easy to do and very nice all year round. They also work very well with ground almond.
Method

Mix coconut,sugar and flour.
Add the eggs one by one mixing all the time. Add the lemon zest mix a little more and then divide the mixture into 12 paper cupcake cases (or normal size cases).
Place in the oven gas mark 5 for about 25m until golden brown.
These cakes are moist and very delicious.
