SponsoredFleurie Georges Duboeuf
The most favored of all the Beaujolais Cru, Fleurie enjoys a very floral bouquet with a refined, smooth taste. An elegant, beautifully made more-ish red with wild strawberry fruit and a fleshy texture.Buy this wine if you like: Light-bodied red with ripe fruit, perfect slightly chilled on a warm summer afternoon.
Description
This is a really easy dish that Im sure everyone has a variation on....here's mine, it's what I bring my friends when theyre sick as it's full of veggies to make them feel better!!

1. Place your chopped onion and carrots in a medium sized deep saucepan on a high heat, with a good lug of olive oil, fry until the onions are soft.
2. Add the bacon and cook for approx. 5 minutes, stirring occassionally.
3. Add the tinned tomatoes and bring to the boil for 2minutes.
4. Add the stock, mix all the ingredients well and bring to the boil for 5 minutes.
5. Simmer for 20 minutes, then leave to cool.
6. Blend the soup into a thick pulp, taste and season with salt and cracked black pepper.
Chef's Tips
If you find the soup too thick once blended, dont be tempted to add loads of water, its surprising how much half a cup will loosen the whole soup.
I like to add a little cilli powder with the onions and carrot sometimes as a variation.
