Ingredients: 1 Tin of Chopped Tomatoes; 1 large onion/ sliced; 1 tbsp tomato puree; 1 tbsp dried oregano; 1 tbsp paprika; 1 tbsp red wine vinegar; 4 rashers smoked bacon; 1 handfull sliced mushrooms; 8 Good quality sausages; 4 floz beef stock; 2 tbsp chopped fresh basil; 1 tbsp olive oil; 1 Knob of butter

Heat a pan and add the oil and butter.Fry the sausages until they are nicely browned. Remove the sausages from the pan, add the onion and bacon, and fry until the onion is softened. Add the mushrooms and fry for another three minutes. Pour in the chopped tomatoes, red wine vinegar, stock, tomatoe puree, oregano and paprika. Return the sausages to the pan and simmer for thirty minutes or until the sauce has reduced and thickened. Add the chopped basil and simmer for a further five minutes and serve.
Best served with creamy mash or crusty bread.
