Description

A family recipe passed on to me from my mother in law. Simple quick bread ideal for breakfast and goes great with cheese and tomato as a snack.

Method

  1. 1

Sprinkle a large heavy bottomed frying pan with flour and heat over a low heat.

  2. 2

In a large bowl mix the flour, bicarbonate of soda, cream of tartar and salt.

  3. 3

Add the buttermilk and mix well until is a loose dough (quite 'raggy' in appearance).

  4. 4

Add additional milk if needed to bring together the dough.

  5. 5

Knead lightly for a minute to ensure combined well.

  6. 6

Shape dough into a circle and roll out to the size of frying pan you will be using and ideally about an inch thick.

  7. 7

    Cut into quarters.

  8. 8

Place the 4 pieces (farls) into the pan.

  9. 9

Cook on one side until the dough has risen to almost double size and the underside is lightly browned (approx 4 or 5 minutes).

  10. 10

Turn over and brown to same degree.

  11. 11

To finish off and ensure cooked all the way through using tongs lift each farl and stand on end in the pan, first on one end then the other, about 2 minutes each until browned off to same degree as the rest of the farl.

  12. 12

Remove from heat and serve immediately.

  13. 13

    Slice in half and butter.

  14. 14

Good with bacon and eggs, cheese or jam.

  15. 15

Good accompaniment to mussels also to soak up the broth.
