Accompaniment
SponsoredOrigin Pinot Grigio Organic
The nation's favourite tipple in an organic bundle. A great value wine,Β from Italy's ever popular Pinot Grigio grape. This wine is perfectly balanced with juicy pear and peach notes and soft floral aromas
Description
This recipe does not use any additional fat otherthan the one from the lamb. Its a very comforting dish, wish I have adapted from a Slimming World Curry Book.

Method
1. Put the onion and garlic into a saucepan with 100ml of water. Cook for 5 minutes until softened and reduce until almost all the water has gone.
2. Add the all other ingredients like the tomatoes, aubergine, lentils, lamb, turmeric, chilli powder, cumin, coriander, sweetener, lemon juice and 450ml water. Cover and let simmer for 1 hour or until tender and the fluid has been absorbed, give it the occasional stir.
3. Remove from heat and stir in the fresh roughly chopped coriander and half of the yoghurt.
Chef's Tips
Serve with basmati rice or Pita Bread and the remaining Yoghurt.
