Ingredients
- tbl spoon Olive oil (I use chilli infused olive oil)
- 1 pack Cauldron marinated tofu pieces
- 1 pack basic stir fry mix vegetables - get the type which consists mainly of beansproats or buy extra beansproats to add in
- 4 eggs. beaten
- 1 tea spoon Chilli paste
- 4 spring onions. chopped
- as much as you like soy sauce (reduced salt variety)
Accompaniment
SponsoredOrigin Pinot Grigio Organic
The nation's favourite tipple in an organic bundle. A great value wine,Β from Italy's ever popular Pinot Grigio grape. This wine is perfectly balanced with juicy pear and peach notes and soft floral aromas
Description
This is probably the easiest and quickest recipe I know. I like to make it when i get back late from the gym, in need of a protein fix but not wanting to eat any carbs before bed.
Method
-
1
1. Heat olive oil in a wok, add the chilli paste and tofu pieces, fry for a couple of minutes.
2. Add the vegetables and beansprouts and half of the spring onion. Cook for another couple of minutes
3. Add the beaten egg, allow to settle for a couple of seconds then move it around with a spatula so that it scrambles into the vegetables.
4. Add a generous amount of soy sauce and mix in.
5. Egg should now be well scrambled and mixed into the other ingredients. Add a final dash of soy sauce and serve immediately in bowls.
Chef's Tips
1. If you don't have this variety of tofu you could try any other type or even veggie sausage cut into pieces would probably work too
2. I love chilli, that's why I have used it here but you don't have to use it if you don't like spicy food - you could experiment with different flavours to add in.
3. Sometimes I also add in a few pieces of preserved root ginger (i.e. the kind you get preserved in white vinegar) or some ginger paste, I add this in at the same time as the chilli
