Description
Very easy and basic soup but still very tasty.
Method

Peel and slice the carrots.
Peel and dice the onions.
Wash and chop the celery.
Peel and dice the potato.
Chop the coriander.
Heat a large pan. Add the olive oil and gently fry the onions and celery until softened slightly. Then add the sliced carrots.
Allow to cook a little then sprinkle the flour over the pan contents and stir to soak up the olive oil(use more flour if required).
Add approx 4 pints of boiling water to this and stir.
Add the diced potato,stir.
Add the stock cube, salt and pepper.
Check the flavour and if necessary add more salt(don't let it cook out 'bland').
Add 1/2 the coriander and allow to simmer until the vegetables are going soft.
Remove from the heat and use a hand blender to liquify the contents.
Add the remaining coriander and return to the heat for approx 5 more minutes.
Ready to serve
If required, more water can be added before blitzing if too much has evaporated whilst simmering.
