Traditional bread and butter pudding, with Opies Stem Ginger

Cut each slice of buttered bread into small triangles and place half into a 1 litre (2 pint) buttered oven dish. Sprinkle with half the sugar and add the finely chopped ginger. Top with the remaining bread, butter side up. Sprinkle with the remaining sugar and ginger. Beat the eggs, milk and ginger syrup together and strain into oven dish, over the bread. Allow to stand for 30 minutes then bake in a pre-heated oven at 160 C/325 F/ Gas Mark 3 for 45 minutes or until set and golden on top.
