Description
My Wholesome thickly sauced recipe as my mother used to make. Probably serves 4 but on it's own 2 :)
Method

1
Cook the pasta in boiling salted water for the indicated time in a saucepan.
Preheat the oven to 200C.
While doing this, melt the butter (5th of a block) in another large saucepan.
Remove from heat, and add the flour (2 pudding spoons full), with some salt and ground pepper, forming a paste, by stirring with a wooden spoon.
Return to heat, and add the milk in small amounts, which slowly turns the paste into a sauce, whilst continually stirring to avoid lumps and burning. Add all milk and bring to a boil.
Add 6 - 7 oz of the grated Cheddar, and chopped onion to the sauce and heat until all the cheese has melted in.
Drain the cooked pasta and add to the sauce, stirring in.
I use a 9-10 inch square Pyrex dish, which I add the completed Macaroni Cheese.
Sprinkle the grated mozzarella, and remaining cheddar, evenly over the dish and place in the preheated oven.
Leave in the oven until the topping is brown and crisp.
I prefer to eat this (half) without anything else, and then lie on the sofa for a while :)
Add finely chopped birds eye chilli's if you want it stronger - when adding the cheese and onion.
