Pre-heat the oven to 180ΒΊC/355ΒΊF/Gas Mark 4 and line a 12-cup muffin tin with muffin cases.
In a large bowl, mix together all the dry ingredients except for the oats β the flours, seeds, sugar, spice and baking powder. In a separate bowl stir together the honey, eggs, Alpro Almond milk and oil.
Add the egg mixture to the dry ingredients along with the apple and blackberries, and gently blend together using as few motions as possible β itβs important not to over-mix the muffins, or they wonβt rise properly.
Spoon the mixture into the cases, top each muffin with a few pumpkin seeds and a sprinkle of oats and bake for 25-30 minutes until golden.
