Muscat Beaumes de Venise Sweet Wine

Beaumes is famed for its wine made from the Muscat grape. Rich, sweet and luscious with a touch of white flower on the finish. A delicious and subtle dessert wine. Buy this wine if you like: Sweet dessert wines that are lighter in style.

Description

The reaction you will get placing these in front of your guests is just 'Wow'. This again as many of my recipes is a healthier option made with Fromage frais..

Method

  1. 1

    For the pastry:

    1. Preheat the oven to 220C/Gas7. Prepare a baking sheet by lining it with parchment paper. Divide the pastry into four and roll out each one into a square 10cm.
    2. Place on the prepared baking sheet, well spaced apart as they will rise.
    3. With a sharp knife score a border about 1cm in along the edge of the pastry.
    4. Place in the oven and bake for 12-15 minutes until the pastry has risen slightly and is golden. Remove from the oven and cool on wire rack.

    For the filling:
    1. Beat together the fromage frais and quark and icing sugar. Flavour with the rose water.
    2. Push down the centres of the tarts to make space for the filling and carefully spoon onto the puff pastry shells.
    3. Top with the berries and serve dusted with icing sugar

Chef's Tips

Tip 1.
Of course you can exchange the fromage frais and quark for whipped cream or even custard.
