500g plum tomatoes, thinly sliced
chopped fresh thyme for sprinkling
200g goat's cheese crumbled
olive oil for drizzling

Easy tarts with the rich flavours of goat's cheese and tomato.

Method

1. Preheat the oven to 200C/180C fan/ 400C/gas 6. Unfold the pastry and cut it into four rectangles. Spread the pastry with a little dijon mustard, scatter over the chopped shallots and arrange the tomato slices on top. Sprinkle over a little chopped fresh thyme and the crumbled goat’s cheese, and drizzle with olive oil.
2. Bake for 20 minutes until puffed and golden.
