β’ 1)boil a pan of water and add a heat proof bowl over the top add the chocolate and stir whilst it melts add the butter and sugar and stir it whilst it turns a rich dark brown colour.
2) Leave on the side to cool, whilst you whisk the eggs and sieve the flour/cocoa.
3) Then gradually add the eggs and flour and cocoa .fold it in to make it nice and light. do this until the eggs , flour and cocoa have finished. Then for 2 mins continue to fold ,it should now be a nice rich brown colour.
4) grease a cake tin and pour in the mixture ,cook on high for 30 mins until solid in the middle .use a fork to test this, if any liquid cake mixture comes out leave it for a few more mins quick though you donβt want the cake to fall.
5) meanwhile start on the butter cream melt the chocolate over boil water in aheat proof dish stirring until melted. remove from heat.
6)at medium speed beat the butter until smooth with an electric whisk or use a hand whisk until smooth. add the rest of the ingredients and beat until a spreading consistence.
7) WHEN THE CAKE IS COOL cut in half add the butter cream and place in the fridge.
8) melt the left over milk chocolate in a pan over boiling water stir until melted .
9)dribble the melted chocolate over the cake in random strokes add the Maltesers on to the chocolate so it sticks but back in the fringe until time to serve .
10)leave in the fridge until the chocolate is set then cover it in cling film or in a sealed container to keep fresh
Chef's Tips
