Ingredients
- 3 oz lard
- 2 oz demerara sugar
- 4 oz golden syrup
- 1 tsp ground ginger
- ½ tsp bicarbonate of soda
- 8 oz self raising flour.sieved
- Bakewell Baking Parchment

1. Put into a pan,the lard,chopped into 4 pieces,sugar,syrup,ginger and bicarbonate of soda.
Heat gently until lard has melted.
2. Remove from heat.Stir in flour,2 tablespoonfuls at a time,until all is well combined.Roll into balls,a teaspoonful at a time.
3. Place on a baking sheet lined with Baking Parchment,about 2 inches apart.
4. Bake it on Gas Mark 3/325F/170C for about 10 minutes.
