1. Preheat oven to 190oC.
2. Separate the thyme mostly into leaves but leave a few sprigs whole.
3. Place the sweet potato wedges on a large baking tray and toss together with the olive oil, the thyme and the chillies. 4. Spread into a single layer, season with freshly ground black pepper and roast for 45 minutes turning halfway.
