Description
Got home from a board meeting and chucked this together. Turned out to be DELISH and am having it for lunch too!
Method

1
1. Get two woks or large frying pans on the heat with 1 tsp oil in each.
2. In one, add the chicken (sliced) and the spices.
3. In the second, add the onion and pepper and stir till the onions are transparent (but not burnt). Turn down and add the sweetcorn and mange tout, plus the garlic
4. In the first pan, add the prawns and stir until the chicken and prawns are cooked.
5. Then lift the chicken and prawns out with a slotted spatula and add to the vegetable mix to keep hot, leaving the spiced oil in the pan
6. Add the rice to the spiced oil and stir for a minute.
7. Then add the eggs and stir until the eggs are sort of scrambled into the rice
8. Combine contents of both pans in a large bowl and serve immediately, with a large glass of wine, in front of the TV.
I added some leftover spring greens to mine as well which were yummy, but other additions could be Pak Choi, or indeed anything that's kicking around your fridge really! Pork fillet could be used instead of (or as well as!) chicken. Feel free to play around with spices. I wanted something mild and comforting hence the mild chilli powder, but you could whack some sliced chilli and/or hot powder in there.
Enjoy!
