Description

A deeply flavoursome and highly aromatic dish, inspired by an age old Gujarati recipe. Simple and unadulterated. Just pure fresh herbs and spices plus the chicken.

Method

  1. 1

Dice the chicken breast or chicken thighs.

Leave to marinate for 30 minutes in the Bipin's Jeera or Bipin's Garam Masala.

Cook in a covered pan on a low heat for 20 minutes

Garnish with coriander, add a good squeeze of lemon.

    Absolutely delicious, Enjoy!

Chef's Tips

Leaving the chicken to marinate for 30 minutes is optional, but it does allow a better flavour to develop and the meat takes up more of the spices and aromas.

While cooking the chicken it is advisable to cover the pan which helps to retain moisture.

This dish should be served with rice and a green leaf onion salad.

Note that there is no need to precook the chicken or seal it or add anything else as the fresh herbs and spices need to be allowed to impart the flavours into the meat.

Bipin's masala are a unique blend of fresh herbs and pure spices and nothing else, no additives, no preservatives, no colourings, no flavourings, gluten free, dairy free, so it is suitable for vegetarians and vegans.
