Description

I received this recipe from my friend Laura, and adapted it slightly. It's great party food, particularly for friends who like their chillies!

Method

  1. 1

    1. Slice the chillies lengthways, and scoop out the seeds with a spoon (wear gloves!). Try to keep the chilli in one piece if possible.
    2. Stuff each chilli with the double gloucester cheese, and close the two halves together.
    3. Mix together the baking mix, cheddar and sausage meat in a large bowl. Get you hands in, make sure it's well mixed.
    4. Place the mixture between two pieces of cling film and roll out to a thickness of 15mm. Take off the top layer of cling film (it's to stop the mixture sticking to the rolling pin/board).
    5. Place a stuffed chilli at an edge, and roll it until the edge meets the mixture and it has an even covering. Roll it between your hands if necessary.
    6. Break the egg into a wide bowl and beat it. Pour some breadcrumbs into another bowl.
    7. Roll each sausage meat parcel in the egg, then breadcrumbs and place on a greased baking tray (reusable baking sheets are great for this).
    8. Cook in a hot oven (180 degrees fan assisted) for approximately 20minutes. You should see them bubbling slightly, and brown all over.

    Notes:
If you like them hotter, you can mix some extra hot chillies in with the double gloucester.
They freeze well (raw or cooked), and are still quite tasty when reheated.
