Method
-
1
Heat oil in pan and fry chicken pieces for 20 mins (remove onto plate).
-
2
In remaining oil fry chopped onion and garlic and fry for 5 mins until cooked.
-
3
Add peas and sliced chorizo sausage.
-
4
Stir in rice (do not wash as this makes paella mushy).
-
5
Add stock with saffron & paprika - bring to boil.
-
6
Reduce heat and simmer uncovered for 25 mins stirring OFTEN or until stock has been absorbed.
-
7
Whilst simmering prepare mussels and prawns - take shell off prawns, scrub mussels removing 'beards'.
-
8
Put in large pan of boiling water and cook covered for 5 mins, until they are all open (THROW away any which remain CLOSED!).
-
9
Then drain.
-
10
Return cooked chicken to cooked rice.
-
11
Add bag of frozen mixed seafood and heat through for 5 mins.
-
12
Stir in mussels and prawns and heat for a further few minutes.
-
13
Season and decorate with pimiento & parsley.
