The Bun bit:
Mix the sugar and margarine until creamy, add milk and eggs mix until combined, add sifted flour, coco and baking powder mix well and add the red colouring. Seperate with a large table spoon into large muffin cases (two spoons to each case) place in the oven on high heat for 15-20 mins checking after 10mins, when the top has started to spilt like a muffin then they are ready to cool on a wire rack.
The Topping:
When cool you can ice with buttercream, to make this I mix margarine with food colouring and vanilla essence then add sifted iceing sugar until its very firm to stir and taste's like vanilla ice cream, put in a pipe bag/tube and pipe swirls round the bun and leave to set, if its too stiff, add water to thin out, its easier to thin out than thicken up.
Chef's Tips
- flavour with coffee for a real mocha bun
- you dont have to ice them, if your packing them up for a picnic, they taste great with or without
