Description
I came up with this one day facing what to do with the remains of the potato bake. Hope you love it as much as I do.
Method

Preheat the oven to 190 degrees C or equivalent.
Mix the herbs with the breadcrumbs.
Saute the onion in the oil until just going soft and then add the mushrooms and fish. Keep cooking until the mushrooms are just going soft and the fish is gently cooked on the outside.
Transfer to a buttered baking dish, having drained off as much oil as possible. Pour over the potato bake and then spoon over the breadcrumbs/herbs.
Bake for 20 mins. The sauce should be bubbling at the sides and the top golden brown.
Serve with any green steamed veg. It's yummy - enjoy!
Chef's Tips
Of course you can make the proper potato bake sauce with cream etc. It works just as well.It was only that I won the jar in a raffle(!) and on the principle of want-not-waste- not........
