Description

A very moist low fat version!

Method

  1. 1

Mix the flour, cocoa powder, baking powder and sugar together and set aside. You can reduce the sugar a bit if you so wish.

Drain the beetroot and roughly chop enough to get into food processor - I put it in whole and slice it with a knife in the bowl of the processor to save mess. With the machine running add the eggs - one at a time. Then add the oil slowly and blend until smooth.

Add the dry ingredients and mix in the chocolate. I recommend a dark chocolate over 70%, but nothing too sweet.

Pour into a greased and lined 8-9 " cake tin (loose bottomed or springform is best) and bake for 45 mins - or until skewer comes out clean - at 160 degrees C (or equivalent. Set aside for 10 mins, then turn out and set aside to cool completely on a rack. dust with icing sugar just before serving.

When very fresh I think you can detect the beetroot flavour a bit, but this seems to go in time. My family have never commented on it so it may just be because I know that it is in it!
