Description
After trying one bean burger recipe after another, and always ending up with something either too mushy or too dry, I concocted these. I ain't never looking back!

Strain and rinse the kidney beans. Place in a small pan and cover with water. Bring to a boil, then reduce the heat and simmer for about 5minutes, until quite soft.
Meanwhile, fry the onions and carrot over a medium heat with olive oil. After 5 minutes add the sunflower seeds, garlic and spices and fry for a further 5 minutes.
Transfer the carrot and onion mix to a mixing bowl. Strain the kidney beans and add them. Lightly mash the ingredients, not too much or it will become a paste. Add the salt and pepper, taste for seasoning, add more salt if required. Add the egg and stir to combine. Allow to sit for ten minutes.
Spoon onto a medium hot frying pan, a tablespoon at a time, then roughly shape into a circle. Allow 3 minutes on each side, until golden brown and crispy.
Serve with burger buns, relish and salad leaves. Enjoy!
