Method

Preheat oven to moderate.
Combine lamb pieces, olive oil, oregano, carrots, celery, onion, salt and pepper in a large bowl and ensure lamb is coated.
Arrange individual lamb pieces on baking paper, add 1 bay leaf, wrap tightly, then wrap parcel again in a sheet of foil to avoid juices leaking .
Arrange in a baking pan with at least 2cm of water and cook for 2 hours, or until meat is tender.
Serve with a Greek salad and Greek-style yoghurt .
