Origin Pinot Grigio Organic

The nation's favourite tipple in an organic bundle. A great value wine,Β from Italy's ever popular Pinot Grigio grape. This wine is perfectly balanced with juicy pear and peach notes and soft floral aromas

Description

Sometimes called 'raw chocolate brownies', I find these little treats slightly addictive! Easily adaptable to include your favourite nuts / dried fruits. No baking required.

Method

  1. 1

Line a tin or baking dish with foil. (I use a tin approx. 26cm x 16cm with 4cm sides or a 20 cm square tin). Put the dates in a bowl and cover with hot water then leave to soak for about 15 minutes. Melt the coconut oil in a small saucepan over a low heat. Drain the dates then put them in a food processor with the ground almonds, pecans, coconut oil and cacao powder and blitz to a paste. Spoon half the mixture into the tin or dish. Scatter over the cacao nibs, if using, then spoon over the rest of the paste. Mix together with your hands to distribute the cacao nibs then press into the tin. Scatter the desiccated coconut over the top, and press down. Cover with cling film and chill in the fridge for at least 2 hours before lifting out of the tin with the foil and cutting into squares.

Chef's Tips

*If you can get sticky Mejdool dates, these are even better, and they don't need to be soaked first.
**You could probably use normal good quality cocoa powder instead of raw cacao although the flavour would be slightly different and 'raw purists' (which I am not!) wouldn't agree!

These can kept covered in the fridge for at least a week.
