Description
This is a feel good pud. When you are in some serious need of comfort food this is the ultimate!
Method
-
1
Preheat the oven to gas mark 4.
-
2
Tear the brioche loaves into pieces and put into a oven proof dish.
-
3
Put the caster sugar and water into a saucepan, swirl around to help dissolve the sugar. Put saucepan on the hob over a medium to high heat.
-
4
Caramelize the sugar and water mixture by letting it bubble away, without stirring. Allow this to do so until it turns an amber colour. This should take about 3/4 minutes. Do not allow the caramel to burn!
-
5
Turn the heat down to low and add the cream - it will splutter, don't worry! Whisking away add the milk. If there is any solid toffee in the pan don't worry keep stirring on a low heat and it will dissolve. Take off the heat and still whisking add the beaten eggs.
-
6
Pour the caramel custard over the brichoe and leave to seep in.
-
7
Place in the oven for 20 minutes.
