Description
It's a great way to use up some bananas that have been left at the bottom of the fruit bowl that have seen better days & it makes the house smell heavenly.
Method
-
1
preheat oven to 175 degrees Celsius.
Lightly grease a 9x5 inch loaf tin.
In a large bowl, combine flour, baking powder and salt.
In a separate bowl, cream together butter and brown sugar.
Stir in eggs and mashed bananas to the butter and brown sugar mix.
stir in banana mixture into flour mixture a little at a time, be sure to blend together really well, you don't want flour pocket.
Pour batter into loaf tin.
Bake in preheated oven for 60 - 65 mins (some ovens it will only take 50 mins, keep an eye on it - when its a dark golden brown and has cracked on the top it should be ready) use a metal skewer to prick it - if it comes out clean it's ready.
leave to sit in the tin for 10 mins, then turn out.
I love having a cheeky slice while it's warm with some butter spread on it.
