Dice and fry the oinion in olive oil until soft and golden.
Add half the portion of chopped chorizo & stir in crushed garlic & tsp of smoked parika
Pour in a good glug of red wine and simmer for 3 mins or so.
Add the can of chopped tomatoes and another good glug of red wine.
Turn down the heat and simmer for 10 mins.
Finally stir in the butter beans & the rest of the chorizo.
Season.
If the stew is drying up add some water or another glug of wine!
Simmer for a further 10 mins.
Serve up.
For a really healthy dish serve on some cooked kurly kale.
