Description

A Caribbean based food that consists of some south Island flavour. Some ingredients are difficult for access though.

Method

  1. 1

    1) dice the chicken and marinate in mango juice and jerk seasoning and leave for about 20 minutes
    3) peel mango and chop it with the chilli pepper, and plantain and fry with the jerk chicken, add lemon juice to the chicken as well for a contrast of sweet and sour flavour.
    2) cook a curry sauce by adding cooking oil, coconut milk and flour and curry powder and wait for them to suspend, (this needs to be done when the ingredients mentioned in 2) are cooked for about 10-15 minutes.
    3) cook curry on a low heat for 10 minutes, this is to engage the flavours with each other.
    4) enjoy!!!
