Description
A traditional curry (no gravy like British curries) - moist spiced minced lamb with sweet peas. My Indian friend says this is better than her Mums - high praise indeed!!
Method
-
1
Heat oil in large pan/pot - heavy bottomed if possible - on medium heat
Add Onions, bay leaves and peppercorns and fry until soft (7-10 mins)
Add Ginger, garlic and green chillis and fry for 2/3 mins
Add Turmeric, Garam and Chilli powder and fry for 1 minute
Turn heat up and add minced lamb - brown lamb and evaporate off any liquid
Add Tom puree and 1/2 tin of Toms and cook for a few mins
Add salt, peas and glass of boiling water - bring to low boil and turn down heat.
Cover and simmer gently for 30 minutes.
Take lid off, turn heat up high(ish) and evaporate off liquid (stirring very frequently) until all gone - leaving moist minced lamb but no gravy/sauce.
Add chopped coriander, stir in and serve with Naan breads and/or Chapatis.
Chef's Tips
For those freaks who don't like the taste of fresh coriander added at the end you can add it when you add the peas and the coriander haters won't notice.
