Description
Laab is a spicy Thai Salad with minced meat. Minced turkey, chicken or ostrich also work well! This recipe serves 4 (appetizer) or 2 (main course).

First of all, brown the rice in a dry wok or frying pan at medium heat. When the rice begins to brown, crush it in a pestle and mortar or similar. Do not crush it to a fine powder, you want some bite. Put the roasted rice aside until later. This will give the salad a nutty flavour.
Spoon one tablespoon of lime juice over the mince and let it marinade for a few minutes until you're ready to cook.
For the dressing, mix the rest of the lime juice, and the thai fish sauce (one tablespoon at a time, dont make it too salty!), sugar and chilli powder together in a small bowl.
Quickly cook the mince and garlic together in a pan with the oil, then put it in a mixing bowl. Mix in the shallots, most of the ground roasted rice, red chilli, coriander, mint and the dressing and serve immediately in a bowl of lettuce leaves. Sprinkle the remaining ground rice on top.
