Description

A lovely little recipe learnt from a beautiful spanish lady named Carmen. Spiced up for those who like it with a bit of a zing.

Method

  1. 1

Get the potato's boiling and cooked

Dice the tomatoes onions and peppers

Fry the onions first to get them nice and sweet.

Add the peppers next and then finally the tomatoes. fry all on a low to medium heat and do not fry for more than 15 mins.

Once the potatoes are ready chop them up into 1 inch by 1 inch chunks mix in with the diced veg.

Mix up the eggs. Add some pepper and salt.

Mix the eggs and veg together. mix well.

Put the heat on a very low setting. It will most likely be the lowest setting you can achieve without the heat going off.

Cook for 15 minutes. Once cooked for 15 the egg should have become firm with only a little runny egg residual on the top. Turn the egg around, normally using a plate to flip it and cook the other side for 5 more minutes.

    Then Roberts your fathers brother.

Spanish omelette is actually meant to be better cold so no rush to eat it :)
