1
Finely chop the onions either by hand or in a small electric processor.
Again do the same with the coriander.
Wash the chicken through and dice up into 1 Β½β cubes
Mash the tinned tomatoes or process for 30 seconds.
Finely chop or process the ginger, garlic and chillies
Grab a large pan or a wok and put on a high heat, now put in the oil, cloves and cinnamon allowing to heat up and let the whole spices infuse the oil, at this point you can take them out or leave them in, I suggest leaving them in and if you donβt like it take them out next time you make this!
Okay getting back⦠once the oil is infused and hot, add the onions, allow to turn translucent and then brown a little. Now add the ginger, garlic and chillies. Stir in for about a minute. Time to add the turmeric, and the salt. Stir together and have a quick taste. This is your base masala mix for the curry.
( this can be used with lamb, beef, prawns, fish! and it tastes different each time!!
Once you are happy with the flavour, add the tomatoes, stir in and chuck in the coriander stir again and leave on a med to high heat for about 5 minutes. In the meantime...
wash the chicken and dice up to bite sized pieces 1 Β½β cubes. Now return to the pot and add the chicken, stir in well and cover pot. Leave for about 10 minutes. Once the chicken is cooked, sprinkle over the garam masala powder and leave or another 5 minutes. Stir well before you serve and garnish with a few leaves of coriander.
Best served with Basmati Rice and Naan or Pitta Bread.. Enjoy!
Chef's Tips
When adding the Garam Masala, dont stir in, allow it to sit on top and stir just before serving...the aroma from the spice swirls around the top of the pan and then drops back down in to the curry, giving it a richer less bitter taste...
