A Yummy Side Dish to accompany many meals.

Heat the oven to 200C
Put stock into a large pan & bring to the boil.
Add potatoes & leeks, bring back to the boil for 5 minutes, then drain - KEEPING the stock back in a jug.
Butter a large baking dish or casserole dish.
Layer up the potatoes & leeks higgledypiggledy, season as you go.
Scatter bacon over the top, season well.
Pour over 200ml of the reserved stock, spoon over the cream, then cover with foil.
Bake for 40minutes, uncovering halfway through so the bacon crispens.
** You can use any bacon, we usually use smoked. **
