1. Sift flour,salt and spice into a bowl.Rub in butter finely.Add sugar.
2. Mix to a stiff dough with beaten egg.
Turn onto a light-floured board and knead gently until smooth.
3. Put into a polythene bag and chill for half an hour.
4. Cut into rounds using a biscuit cutter.
Cut out centres of half of the biscuits,using a small cutter.
Transfer biscuits to a baking sheet lined with Baking Parchment.
5. Bake in pre-heated oven on 350F/180C/Gas Mark 4 for 12-15 minutes.
Cool on wire rack.
6. When cold,sandwich together with chocolate spread,using plain biscuit as a base.Dust with icing sugar.
