- 900ml (1.5 pints) water
- 2 onions, sliced
- 2 carrots, roughly sliced
- 2 celery sticks, halved
- 1 leek, halved
- 2 bay leaves
- 2 sprigs thyme
- 2 sprigs of parsley
- 8 black peppercorns
- pinch sea salt to season

1. Put the water, vegetables, herbs and seasonings ina large saucepan.
2. Bring to the boil and simmer gently for at least 1 hour.
Leave to cool and then strain.
