1. Preheat the oven to Gas mark 5 / 190 c / 375F
2. Mix together the softened butter, crushed garlic and herbs in a small bowl.
2. Lay out 2 slices of the Parma ham lengthways on a plate / chopping board (slightly overlapping each other) Trim the asparagus tips so they are the same width as the ham slices, and place 4 of the asparagus tips horizontaly across the centre of the slices.
Repeat with the remaining 2 Parma ham slices and asparagus spears.
3. Butter the chicken breasts on both sides with the herb & garlic butter and place them on top of the aspargus tips. Season with black pepper. The ham is quite salty, but add a pinch of salt too if you require.
4. Wrap the ham slices over the chicken and aspargus to make a tight parcel. If needed, wrap another 1/2 or full slice of Parma ham around the parcel to ensure contents are sealed in.
5. Pour the oilve oil into a shallow roasting tin. Place the chicken parcels into the tin and bake in the oven for 20 - 25 minutes until the ham is crispy.
Serve - goes well with vegetables such as green beans and dauphinoise potatoes.
