Start by cutting and cooking the leeks into small circles until soft, then add in the mushrooms and bacon. Drain the fat and add 500ml of single cream, leave to simmer for 10 mins then add 200g of Philidelphia (dont use low fat philidelphia because it gives the meal a gritty texture) Add quite a bit of pepper to give it a 'kick' and leave to simmer for a further 10 mins. Mean while, cut and boil your potato's and get the mash ready. Once your mash is ready, pour the bacon and leek mixture into a casserole bowl and gently lay the mash potato ontop of it. You can add grated cheese to the top if you feel the need. place in the oven for 30-45 mins on 150 and serve
