Accompaniment
SponsoredOrigin Pinot Grigio Organic
The nation's favourite tipple in an organic bundle. A great value wine,Β from Italy's ever popular Pinot Grigio grape. This wine is perfectly balanced with juicy pear and peach notes and soft floral aromas
Description
This is a traditional Celtic (no pastry) pie and lends itself to variations very well.
Method

1
Fry the garlic and onion gently in a little butter until soft then set aside.
Melt the butter in a saucepan. Beat in the flour to make a smooth roux. Cook this for 2 minutes stirring continuously and slowly add the milk, still stirring. Add the onion and garlic mix, parsley and flaked fish into the sauce. Season to taste, bring the mixture to boil, lower heat and cook for 1 minute before pouring into an oven-proof dish.
Prepare the mashed potatoes and season well. Cover the fish mixture with the mash. Sprinkle the cheese over the top and place an oven pre-heated to 180Β°C/Gas 4 and bake for 20 - 30 minutes, or until the top of the dish is a pale golden brown. Serve hot with steamed vegetables.
Chef's Tips
Variations that I have tried and liked:
Replace some of the fish with smoked cod/Add small handful thyme or some dill to the sauce/Replace some of the milk with white wine (be careful not to allow curdling)/Add some cooked prawns or sweetcorn to fish mixture just prior to covering with mash.
