Orange & Fennel Salad

I found this originally on a salad bar, but it has evolved to a much enjoyed summer dish. Works very well with fish and, according to my husband, there is never enough.

   Segment oranges, saving the juice.
   Thinly slice the onions and the fennel bulbs.
   Mix together in a large bowl.
   Make a dressing using 2tablespoons of the orange juice, 4 tablespoons of oil (personal preference) 2 teaspoons whole grain mustard and honey to taste.
   Add to the salad mix and chill.
   All the main ingredients can be multiplied as liked, but this quantity will serve 4 people.
