Baron de Ley Club Privado Reserva Rioja

The Baron de Ley winery was founded by a prestigious group of Rioja professionals in 1985. They were quite unique in their approach as they modelled the winery on a Medoc chateaux, which was a pioneering move at that time for producers in the Denominacion de Origen Calificada Rioja. This wine is aged in new oak casks for 20 months prior to resting in the bottle for 2 years before release. It has definite claret qualities; the nose is layered with ripe cherry, toasty oak and a touch of cigar box. Lively, ripe, red fruit with dried tobacco and nutty vanilla overtones, round tannins with an expressive woody finish. Rioja wine can be excellent value for money and has terrific cellaring potential. Buy this wine if you like: Well rounded reds, with soft fruit and toasty character, easy drinking for upfront pleasure.

Description

I made this when someone I knew had a cold. It seemed to work - at minimum it made my nose run [vote for this recipe its way better than the other chicken soup recipes here]

Method

  1. 1

    Cut the chicken into quarters
Deep fry it in a wok or frying pan
About 8 mins skin side then five the other
Add to a pan with stock and water
    Add chopped everything
Plus some salt and pepper plus some soy sauce if you have some
    Boil for twenty mins
Then leave to simmer as long as you can
Tear chicken off bone with a knide and fork, if it hasnt come off already
    Take bones out (optional)
Taste to make sure it hits you in the back of the neck - if it doesnt add more chilli, garlic, ginger, salt and pepper
    Serve with nice fresh bread
Reheat when required or just keep simmering for a while

Looks really good and I am going to cook it for my Dad later today as he's not well at all and is wrapped up in bed with a horrid cold - the admiral spending a day in bed is not heard of....... Will let you know what he says and is it makes him feel better!!
