Description
This is my mum's recipe for feta cheese parcels. They are my absolute favourite!

1. Wash the spinach, remove the tough stems and finely chop.
2. Combine the spinach, spring onions and parsley in a large bowl.
3. Squeeze the vegetables well to remove excess moisture. Add the feta.
4. Beat the eggs and add to the mixture with olive oil, salt and pepper. Mix well.
5. Oil a 17x12x2 inch baking pan and stack seven layers of filo pastry, brushing each sheet with olive oil.
5. Place half of the spinach mixture in pan and place four more layers of filo on top, brushing each sheet with oil.
6. Add the remaining spinach mixture, then add another seven layers of filo pastry on top, brushing each layer with oil. If the pastry hangs over sides, push it down inside the pan to make a smooth finish.
7. Score the top to the size of squares or diamonds that you want.
8. Bake at 350 degrees for one hour. Serve hot or cold. Makes around 36 squares.
9. Use some extra olive oil for drizzling.
