Slice and chop the onion
Dice the tomatoes
Cut the cucumber into small dice
Remove seeds and stlks from the peppers.
Dice peppers
Coarsely chop the parsley/coriander
mix all teh ingredients together
Season with the oil and lemon
Sprinkle with salt
Serve with lots of lemon wedges
