Description
These are deliciously chocolately but not too sweet and loved by adults and children alike. They may look like cupcakes but they have a dense brownie texture.
Method

1
Preheat oven to 180 degrees C (350 F / Gas mark 4). Line a cupcake tin with 12 paper or silicone cases.
Melt the butter. Beat together the eggs and sugar until well combined (Just 30 seconds to a minute with an electric whisk is fine - no need to get to pale mousse-texture for this recipe), then add the butter, then the milk and vanilla extracr.
Fold in the flour, cocoa powder and baking powder, followed by half the chocolate.
Spoon the mixture into the cases, dividing it up equally. These don't rise like cupcakes, so they can be quite full.
Sprinkle the remaining chocolate on top of the mixture in the cases, again dividing equally.
Bake for 20 minutes (may need 25 minutes if not using a fan oven) until just firm to touch. Remove from the oven and cool on a wire rack.
Chef's Tips
I used to avoid recipes with chocolate chips / drops because I could never find good quality ones. I used chopped up chocolate instead, which worked fine, but I always wanted the look that the chips / drops give. Then I discovered 'The Chocolate Trading Company' online. They are 'drops' rather than chips and expensive as you have to buy in bulk (1KG bags!) but they keep for ages in a cool place, and so work out good value in the end, in fact better value than the small packets of choc chips you sometimes find on the 'baking accompaniments' shelves. You don't have to use all three types of chocolate in this recipe, I just indulged myself because I had all three.
These are great for picnics / packed lunches because they don't break up like normal cupcakes, or crumble like brownies that aren't in a case.
