Description
This is a very healthy and refreshing soup for a hot summer's day. A friend of mine gave it to me and it is very easy and fuss-free to make: just chop everything and blend it!

You will need a big bowl to put all the vegetables in.
1. Peel and cut tomatoes in quarters and add to bowl (no need to deseed them. Do the same with the onion and garlic (no need to chop the garlic).
2. Deseed the peppers and cut them roughly (big pieces is ok). Add them to the bowl.
3. Peel the cucumber roughly, so that you have some green skin left (I peel it in stripes). Then chop it in biggish pieces and add them into the bowl together with the other vegetables.
4. Now you can start blending all the ingredients (I use a hand blender) and add the salt, oil and vinegar little by little till you are satisfied with the taste. Blend it thoroughly until it has a smooth consistency and chill in the fridge for a few hours. I make it in the morning to eat it for dinner.
Chef's Tips
You can eat it as a soup and if you want it to be more satisfying, you can add bite-size vegetables. I prepare them at the same time as the soup and chill them in the fridge. You can put peppers, spring onions and cucumber. Serve them in a bowl so that each one helps him/herself. I also add some bite-size bread, cut into cubes and fried in olive oil. To fry the bread just make sure that the olive oil covers the whole of the bottom of the pan and toss the bread all the time while frying to prevent it from burning.
This recipe makes 1.5 litres of soup. If you like it smoother, just add a little water. You can also give it more of a kick if you add more vinegar. The best thing is to experiment with the quantities of the ingredients till you are happy with the taste. Also, the riper the tomatoes, the better the "gazpacho" will be!
