1
In a large mixing bowl, combine the yeast, honey, and warm water. Let it stand for about 5 minutes until frothy.
-
2
In another bowl, mix 300g of whole wheat flour, za'atar, and salt. Make a well in the center.
Dough Making
-
3
Pour the yeast mixture and olive oil into the flour mixture, stirring until combined.
-
4
Knead the dough on a lightly floured surface for about 10 minutes, until smooth and elastic.
-
5
Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm area for about 1 hour, or until it's doubled in size.
Cooking
-
6
Preheat your oven to 250Β°C (482Β°F) and place a baking stone or inverted baking sheet inside to heat up for at least 30 minutes.
-
7
On a floured surface, punch down the dough and divide it into 8 pieces. Roll each piece into a ball then flatten into a disk about 0.5 cm thick. Baker's Fun Tip: Ensure your surface has enough flour so that nothing sticks.
Baking and Serving
-
8
Carefully place the disks of dough on the hot baking surface and bake for about 5-7 minutes, or until they're puffy and have golden-brown spots.
-
9
Serve warm and enjoy fresh out of the oven, ideal paired with hummus or a salad for a wholesome light meal.
