Description
I decided to make my own fresh version of a well known chicken cook-in sauce and was delighted with the end result.
Method

1
Cut the chicken breasts into bite sized chunks and begin browning in a generous glug of olive oil.
Slice the onion, peppers and crush the garlic and add to the pan of chicken. Continue until the chicken is coloured and the vegetables have begun to soften.
Next add the thyme, paprika and passata and simmer for 20 minutes until the chicken has cooked.
Once the dish has cooked correct the seasoning, and just before serving squeeze the juice of the lemon in.
Serve with potatoes, rice or crusty bread.
