Mums Goats Cheese Salad

I love this! Leave out the ham for veggievores. Also works well with roasted onions, or in a salad with avocado.

split cheese in half. Score an X in each fig and squeeze it to pen out (you can just cut in half if easier but you need a vessel for the cheese). Put a slice of cheese on each fig and put under a high grill until melted and bubbling. Make the dressing by mixing all ingredients together. Put a handful of salad on each plate. Top with the figgy cheese. Add parma ham. Serve with candlelight and a large glass of sauvignon blanc.
