This is a great veggie dinner. Very satisfying!
Open wine. Pour youself a glass.
Griddle (or chargrill) very thin slices of the aubergine and the courgette. Try and get them as thin as possible, otherwise this takes forever. You may want to brush with olive oil to help along. Put chargrilled veggies in a bowl.
Fry red onion, garlic and mushrooms (diced rather than sliced) add lentils, red wine, tomatoes, sugar. Cook for 10 mins. Take off heat and add herbs.
Put lentil mix in a oven dish, layer on veggies. To make cheaty cheese saude, heat philadelphia with a splash of milk and add in your grated cheese. Pour over the lentils and veggis and then bake for 30 mins at 180. Serve with lots of red wine and a green salad.
