Description
This is a recipe I threw together after a long day at work. To my surprise it was very tasty and so easy to make.

1. Peel and chop carrots & parsnip and boil in a pan for 10mins.
2. In a large pan fry the onions on a low heat in the Sunflower oil for 10mins until they are soft, but not brown. Add the Garlic and simmer for 1min.
3. Add the mince to the onion and garlic, stir until combined and starting to brown. Add a touch of salt & pepper to taste. Whilst the mince is browning add parsley, basil, oregano, oxo cube and vegetable stock. Stir until evenly distributed. Leave to simmer for 2mins. Then, stir in tomato puree & tin of chopped tomatoes. Once empty, fill the tomato tin with 100ml of water and add to the bolognese mix. Add the vegetables to the mix and stir well. Leave to simmer for 25mins. Cover with a lid and stir occasionally.
4. After 17mins add boiling water to a pan and ease in the spaghetti. Bring to the boil and allow to simmer for 9-10mins until cooked.
